Disconnected wires must be separated from each other so that there is no short circuit, then apply voltage and determine with an indicator on which wire the screwdriver is lit, this will be the supply wire. You can of course and visually try to determine, but it is more difficult. Sometimes wires from the shield to boxes of a larger cross-section than from boxes to sockets. To answer how best to connect your two additional sockets, which terminal blocks to use for this and whether the wiring can withstand, you need a photo. If the old house, most likely there are two twists - zero and phase wires. So the cable to the sockets should be connected from these twists: from one twist you take the phase, from the other zero.
